Zucchini fritters

There are many variations of this recipe, of which you will receive. You can experiment mixing any ingredients, however mushrooms are not recommended as they have too much moisture.

  • 4 zucchinis grated

  • 5 eggs beaten

  • Quality grass fed Feta (optional)

  • Any extras to top – Bacon Bits/Slivered almonds

Method: (as per YouTube video) grate zucchinis into a bowl and once complete, using both hands, grab a handful, squeeze out the liquid and transfer into another bowl, repeat.

Whisk the eggs, season with salt and pepper.

Grease muffin tray/s and place dried zucchinis into each muffin cup about ⅔ full. Add the bacon bits and feta on top. Pour egg mix over each muffin cup and top with slivered almonds.

Optional: When squeezing water out of the zucchini, you can place on a bed of rock salt to extract more water again, this will keep a dry and firm fritter.
