Super savoury mince

This recipe is perfect for using up all your leftover veggies. Gather them up and chop them finely. I have a vitamix which is brilliant at doing this efficiently saving loads of time.

  • Grass fed Beef/Pork Mince

  • Butter/Ghee – 1 TBSP

  • Chopped onion

  • Curry Powder – 1 TSP

  • Tomato Paste – 1 TBSP

  • Tin Salt reduced Tomatoes

  • Any leftover Veggies chopped finely

  • Himalayan Salt and Pepper

  • Bay leaf

Method: Melt some butter/ghee into a pan and fry off the onions till soft. Add the curry powder and cook for 30 seconds or until fragrant (do not burn). Add the mince and brown off. Add the tomato paste, tin of tomatoes and chopped veggies. Add the bay leaf and season with salt and pepper.

Simmer for 30 mins or until some of the liquid evaporates. Cool and store in little PBA free containers to freeze.
