Bacon fried broccoli rice




I use this to take for a mid morning/mid afternoon work snack. It can easily be a breakfast dish to get a full spectrum of Fats, proteins and (good) Carbs.

  • 1 large Broccoli cut into small florets

  • 2 rashes of bacon diced

  • 2 eggs

  • Chilli sauce

  • Salt and pepper

Method: Put the Broccoli florets into a blender and create small fluffy rice like pieces of Broccoli,

Fry off the bacon pieces and add the Broccoli rice. Cook through for 5 mins. Whisk the egg and add to the pan, stir through for 1 more minute add salt and pepper to taste, chilli sauce if desired.
