WN Christmas truffles

• 400 g Hazelnut meal
• 6 TBSP honey
• 50 g coconut oil
• 2 TBSP applesauce (sugar free)
• 100 g dried apricots
• Zest of 1 or 2 Oranges
• 2 TSP Christmas spice mix
• 1 pinch of salt
• 100 g dark chocolate
• Almonds to decorate

Method: Soak apricots in hot water for about 15 minutes until soft. Meanwhile combine hazelnut meal, honey, coconut oil, apple sauce, orange zest and Christmas spice mix in a separate mixing bowl. Mix everything together until you have a smooth batter. Drain soaked apricots and cut into small pieces. Mix them into the batter and form little truffles. Put the truffles into the freezer for 15 minutes. Meanwhile melt the dark chocolate. Get the truffles out of the freezer and cover them in dark chocolate. The chocolate should harden up pretty quick as the truffles are cooled down. As soon as it’s hardened they are ready to enjoy. You can store them up to 4 weeks in the fridge.
